Gettin' yolked during NATIONAL EGG MONTH?! YAS.
I haven't felt the need to celebrate since at least five of my mornings start out with eggs... but this masterpiece was too prefect not to consider a celebration.
1/2 c egg whites mixed with finely chopped spinach + 1 egg over easy (#yolkporn on point HI 👋) + 2 slices of extra lean chicken bacon
And more importantly let's talk about that toast.. 😍 one slice Ezikelbread split into two gems/ one side NF cottage cheese topped with fire roasted tomatoes and Terramedi oregano / other side dived avocado mixed with purple onion pieces topped with lemon pepper.
DROPPIN' A BEET of excitement these days by thoroughly steppin' up my avocado toast game. 😉🥑 How?! The usual, a random concoction, that I'm now calling BEEGURT SPREAD! 😍
For about one plentiful cup of lilac lustful looking spread...
1 c greek yogurt
4 oz beets
1 tsp garlic
1 tsp parsley
1/2 tsp black pepper
1/2 tsp salt
1 tbsp olive oil
Food process or blend for 20-30 seconds until smooth! What to top with?! This featured glory is covered in thinly sliced avocado, low fat feta cheese, black pepper and cilantro. Freshly paired up with an egg white scramble topped with crushed red pepper and bacon bits... belly love right there. #avocadotoast

Whites of five large eggs
1/2 oz (14g) Bob's Red Mill Almond flour
1/2 tsp cinnamon
1 tsp vanilla extract
1/2 tsp baking powder
Whisk up well to cook in a small skillet pan! Olive oil spray does wonders with this thin little ones. After your pan heats up turn it down to low-med; they cook like hot cakes!
the filling: plain greek yogurt and strawberries
the topping: blueberries, melted drizzled peanut butter and a few grated/shaved almonds
Hellooooo gorgeous. 👋 By no means does my morning meal look pretty everyday, but every once in a while i put in the extra effort to make it aesthetically pleasing! However on average 5/7 of my first meals do in fact start with exactly what you see- QUICK, few ingredients, protein filled and delicious. 😋
Start out with a lightly sprayed (i use all natural olive oil spray) small frying pan, heat it up. After 10 seconds pour in 1c egg whites (you can easily sub in 2-3 whole eggs) then on top (which will mix in on their own during the cooking process) add 1 tbsp oats and a handful of spinach. The oats and spinach will give your eggs the pancake texture and shape! I cook the first side for MUCH longer than the second so when i flip it over for the first time it's fully cooked (aka "pancake" shape stays together with zero problems).
The glorious topping is 3 tbsp non fat cottage cheese (sub option any plain greek yogurt) with 3 tbsp Avocado and 1 tbsp Lemon Pepper. You can use any measurements you want, just keep the ratios! I also add mustard or hot sauce to everything, so there's that. 🍋 🍳 🌿 #ilovebreakfast
Let me first emphasize how all this food is only 280 cals containing 37 g of PROTEIN, aka so low carb and fat, clean, nutritious, filling... have I sold you on making this yet? 😂
Ok moving on, the goods:
3/4 cup egg whites, beaten
1 serv broccoli slaw (2oz Trader Joe's)
1/8 c jalapeños
1/2 baby avocado (2oz)
100 cal package of Thinkjerky Ginger Orange
Stove top in a sauce pan start with jalapeños (or skip on if you don't like spice). After you see slightly crisp edges add in the beaten egg whites (or use whole eggs if you wish, just note this changes the macros I mentioned to higher in fat and lower in protein) following up with broccoli slaw.
Slowly mix/flip around the ingredients as they all cook together!
Once the eggs are fully cooked into a glorious tasty mess add slices of avocado on top. Lastly sprinkle on the entire mini bag of ginger orange jerky pieces! #eggwhitescramble

Sea Salt Caramel... holy glorious taste. I scooped up what somehow happened to be exactly one serving to top off amazing protein waffles... which are easily made by whisking together the whites of 4 large eggs, 1/2 serving of Optimum Nutrition vanilla lean protein and a tsp of baking powder!
Topped off with cinnamon, half of a banana (froze the other half for future use) and obviously Sea Salt Caramel. #proteinwaffles
